This easy, hearty, delicious and nutritious split pea soup is one of my go to meals. Honestly, you can add anything to this recipe and change up the amounts of anything – this recipe is fool proof.
Heres how to make it –
•1 medium carrots
• 4 small potatoes
•3 cups dry green split peas
•chicken stock cube (vegetarian)
•6 cups water
*This is just an extremely basic recipe but I often like to add grated zucchini, spinach, or any other vegetables that need to be used up.
1.Bring the water to the boil.
2.Chop the carrots and potatoes (and any other vegetables your’e using) into rough cubes – it really doesnt matter how big/ small they are.
2. Put the vegetables, split peas & stock cube into the pot and bring to the boil.
Once it has come to a boil reduce to a simmer.
3. Regulary check & make adjustmentd to the mixture where necessary e.g. more water, increase temperature etc.
4. The soup will be ready once the vegetables & split peas have softened. Depending on how you like your soup it can be very thick and creamy or more liquidy – just add more water.
